Creole Chicken

Creole Chicken.

This was one of the first recipes that I made for my dad and brother when they came to visit me back in college. I was renting an apartment with my friend and they came to visit and I felt like such a big girl cooking for my dad lol. Normally it’s the parents that provide food and shelter, but that weekend they were staying at my house and eating food that I prepared so I felt compelled to make sure it was good. (I think I got the inspiration from an app called allrecipes ? can’t be sure but thanks!)


(some chicken! I used chicken breast tenderloins this time)

14 oz diced tomatoes

1/2 cup chopped celery

1/2 cup chopped green pepper

2 cloves minced garlic

1/4 cup cup onion

Red pepper flakes



Salt & Pepper

Chili sauce (found in the aisle near the marinara?)


Cut the chicken into strips on chunks.

Heat a skillet on medium to high, coat the bottom with some olive oil when the skillet gets hot. Throw in the onions and garlic and cook til translucent.

Brown the chicken chunks. (Chicken chunks? that doesn’t sound appetizing but I promise it is)

Toss in the rest of the ingredients and let it simmer for like 15-20 mins.

Serve with some white rice.




Turkey Lasagna

As stated in my previous post I made lasagna. and they loved it, like they really LOVED IT. they kept getting up to get more, and telling me how good it was. 😀 makes a cooks heart happy. not that I’m a cook but I cook lol…

Kept it pretty simple, just meat and cheesey goodness, with noodles that you don’t have to cook first. (Love these noodles, they make your life easy and that’s not a bad thing. And they are in the same aisle as the other ones, they’re just smaller)

I started first by making the ground turkey/meat sauce.

{I don’t have pics of the process but I’ll tell you what I did and how I layered it and all that.}

What do you need for the lasagna? : turkey/meat sauce, ricotta cheese ( I used 15 oz), parmesan cheese, mozzarella cheese, and italian 5 cheese, tomato sauce.



Minced garlic (few cloves)

Minced white onion

Olive Oil

Garlic salt & Black pepper

Italian Seasoning

Garlic powder & Onion Powder

1 lb ground turkey (or 1 lb ground meat)

2 cans 8 oz tomato sauce


I turned the stove on, with the pan and let it heat up. Coated the bottom with olive oil, let that get warm. Then I threw in the minced onion and garlic and cooked them til the onion was transculent and the kitchen was smelling amazing. [i love the smell of garlic when it’s being cooked ! <3] I put the ground turkey in and used a spatula to break it up, and cook them til they were brown. (turkey doesn’t get as brown as meat so don’t overcook it lol)

Then I added in the tomato sauce, (I believe I used a basil, oregano and garlic flavor sauce??) and the spices, also maybe 1/4 cup water.  I let all that sit and cook for a few mins, stirring as you go.

Pre heated my oven to 350 F.

Coated the bottom of my lasagna pan with tomato sauce. (The noodles need to be “wet” so I always try to layer under and on top of them with tomato sauce or else they will get very crispy, and not in the good way. I put a layer of noodles.

Put a layer of the meat sauce. Sprinkled mozzarella.

Then I mixed ricotta cheese with parmesan and a little garlic salt and pepper. Put a layer of that (about half of the ricotta mix).

Spread a thin layer of tomato sauce and then another layer of noodles. Put the rest of the meat sauce on top of the noodles.

Sprinkled mozzarella and italian 5 cheese and the rest of the ricotta mix. Sprinkled more parmesan, and thin layer of tomato sauce and then noodles.

Because the noodles need to be “wet” i put a thin layer of tomato sauce on top and sprinkled more parmesan and italian 5 cheese to finish it off.

Cooked it for about 30 mins. Voila.



One of the girls brought garlic bread so we ate that with it too. 😀


pizza pizza!

so i’ve been doing great at the gym and at home in terms of keeping myself healthy and focused toward staying away from fatty foods.. but you gotta have a little indulgence every now and then. it just helps you stay balanced and sane!

i have been meal prepping on sundays and i find that my cooking lasts me til friday afternoon, between me and baby girl. so that leaves friday night up dinner up in the air.  this rendition was pizza day.

originally i intended on calling papa johns and just ordering a nice gooey chessy pizza from someone that would do the work for me. but wheres the fun in that? i needed to grab some milk from the store anyway so DIY Pizza it was for me last night. after looking at what i would need i realized how easy it is to make from home, and cheaper too! i had most of the ingredients already in my pantry and fridge.


i didn’t take a picture of all my ingredients. boo. but i used a pillsbury refrigerated pizza crust and made my own pizza sauce.

too make my pizza sauce:

i sautéed some white onion and minced garlic in olive oil.

then i added in a 15 oz can of diced tomatoes (with the juice) (i had a fire roasted flavor in my pantry)

i also added in some dry basil, oregano, thyme, garlic salt, black pepper and a little more olive oil and a tbsp or 2 of red wine vinegar.

the texture wasn’t as thick as i wanted it to be so i added in maybe a 1/4 to 1/2 can of 6 oz tomato paste to thicken it up.



after my pizza dough was spread out i followed the package directions to pre bake it.

i spooned the tomato sauce and then laid the spinach down first.


then i used maybe 2 cups of cheese? (I’m not big on measurement when i cook lol) i mixed parmesan and mozzarella


i sliced some baby bella mushrooms and crumbled some garlic and herb goat cheese for the top


then i baked my pizza again. maybe 8 mins? i let it stay in the oven while i finished washing the dishes and when it pulled it out it was beautiful and delicious and everything i hoped it would be.


moral of this story ? make your own pizza !

all of the pizza toppings were things i normally keep in my household anyway. and the pizza crust? it was less than 3$ !!!

a cheese pizza alone is estimated 8$ + cost of additional toppings. and it took me less than 15 mins in cooking time !

Chicken & Wonton Wrappers 2 ways

While grocery shopping 2 weeks ago, i picked up a pack of wonton wrappers, to my surprise, in my regular grocery store.


i normally have to drive to this asian market to get stuff like that, not that ive ever used wonton wrappers before but i was super excited about them, the package even advertised that you could make ravioli with them! i needed it in my life!

and then they got put in the fridge and forgotten about.

until yesterday.

after making that beautiful strawberry daiquiri i figured why not do something special for sunday dinner too?


Chicken breast
Hot Sauce
Cream Cheese

First I cut the chicken breast up into cubes and seasoned them a little. I pan fried them while melting some butter. I mixed some hot sauce with the butter and set it aside. After the chicken was cooked and cooled, i took a fork and shredded it and added it to the hot-sauce-butter mix.


I put some oil in a pan and got that hot and ready. I laid the wontons out and put some cream cheese on each one with a little spoon of the chicken.


I dipped my finger in water and ran it on the edges to seal the triangle wontons and then fried those bad boys up !

They were good too.



Wonton Wrappers
Sour Cream
Muffin Tin

I cut up another chicken breast into cubes and seasoned it a little different and pan fried that too. I set my oven for 400 F.

When the chicken was done, I shredded them a little bit too. I put a wonton wrapper in each muffin tin and put some chicken and shredded cheese to almost fill the cup. I let them cook for 8-10 mins at 400.


I topped them with lettuce and sour cream. They were good tooooo.
