Weekend in Review – Teacher Appreciation Stuff

Life has been a bit of a blur, cookie orders, work stress and wedding planning have had me super caught up. I’ve even been missing from the gym, tsk tsk. I have a wedding I need to look amazing for!

I started off last weekend pretty well though; on the couch watching Star Wars movies all day. Yep nerd alert, I’m obsessed. And May 4 is Star Wars Day and TBS treated your girl with her fav movies all day long.

Actually I stepped out for a minute to deliver Teacher’s Appreciation cookies to some customers. I even put on my fancy new chef coat. I felt super legit wearing it, and now need to task someone with embroidering my name on that bad boy. Or my logo. Or maybe just my name, since I’m still undecided about rebranding.

I waited at Starbucks in between and treated myself to a Triple Mocha Frappe, wowwmagawd that thing was soooo good. I know it probably had mad calories in it, but man it was worth it.

For the teachers in my life, I spent the weekend getting a little crafty to thank them. Work station was looking like a tornado went off, but when I’m in creative mode that doesn’t always align with clean mode. It’s the only downside to the creative fun; the whirlwind of stuff after.

Sunday mini and I made a point to go have lunch together, (like she had a choice). Can you guess which one was mine? Also I got the side salad to make it seem healthy, but the dressing was just not doing it for me. I ate as much of it as i could (half) and disposed of the rest unhappily. I hate wasting food like that, but the dressing was such a buzzkill and was irking my tastebuds. I did get lots of healthy veggies on my pizza though! And I only ate half for lunch, I saved the rest for dinner.

Biscuit pizza

I am not a fan of cooking on Fridays, something about the weekend just screams relax and get out the kitchen (unless it involves baking yummies ! Lol). My mom has this thing where she does NOT cook on Fridays either, pretty sure I’ve come to adopt her philosophy.

Anyway this past Friday, I needed something to feed mini and myself. We ate all of my meal prepped food for the week and I didn’t feel like standing at the stove to make something. Soo I thought about what I had in my kitchen and what felt Friday appropriate. Pizza.

[But when isn’t pizza appropriate? I mean come on, bread and cheese alone: yummmmm. Throw in some saucy tomato goodness and voila! Amazingness that you can eat with your hands. I seriously think pizza should be in the major food groups but what do I know. ]

Anyways, I didn’t have a premade crust, and I didn’t feel like attempting to make my own dough (which I will do soon cause I can, with my mixer!) but I had biscuits! You know the kind that come in the tube that you pop out and separate and bake for like 10 mins? Yup those, I’m sure you have some in your fridge right now. They are a great quick side for dinner so I know when they’re on sale I grab a few.

Anyway I popped those out and put them on a baking sheet, and pressed them flat. I didn’t use a rolling pin or anything, just used my fingers and kept pressing til I had a flatter disk to work with.

Then I spread tomato sauce on my mini pizzas.

I only had cheddar cheese so I layed that heavily and realized that I had some spinach so I shredded that up and only covered two before my oven was ready.

We really weren’t in a mood for waiting any longer for dinner 🙂 two spinach and 3 cheese it would be.

I baked them for about 15 mins at 350 and dinner was ready.

After enjoying them, I think I maybe could have cooked them longer? The crust wasn’t as crusty but I’m not sure if that’s because I was using a biscuit and not pizza dough lol. Maybe I could have precooked them for a few mins before adding my pizza toppings? They were good but not perfect. They did make a good quick fun dinner though !

pizza pizza!

so i’ve been doing great at the gym and at home in terms of keeping myself healthy and focused toward staying away from fatty foods.. but you gotta have a little indulgence every now and then. it just helps you stay balanced and sane!

i have been meal prepping on sundays and i find that my cooking lasts me til friday afternoon, between me and baby girl. so that leaves friday night up dinner up in the air.  this rendition was pizza day.

originally i intended on calling papa johns and just ordering a nice gooey chessy pizza from someone that would do the work for me. but wheres the fun in that? i needed to grab some milk from the store anyway so DIY Pizza it was for me last night. after looking at what i would need i realized how easy it is to make from home, and cheaper too! i had most of the ingredients already in my pantry and fridge.

i didn’t take a picture of all my ingredients. boo. but i used a pillsbury refrigerated pizza crust and made my own pizza sauce.

too make my pizza sauce:

i sautéed some white onion and minced garlic in olive oil.

then i added in a 15 oz can of diced tomatoes (with the juice) (i had a fire roasted flavor in my pantry)

i also added in some dry basil, oregano, thyme, garlic salt, black pepper and a little more olive oil and a tbsp or 2 of red wine vinegar.

the texture wasn’t as thick as i wanted it to be so i added in maybe a 1/4 to 1/2 can of 6 oz tomato paste to thicken it up.

 

 

after my pizza dough was spread out i followed the package directions to pre bake it.

i spooned the tomato sauce and then laid the spinach down first.

then i used maybe 2 cups of cheese? (I’m not big on measurement when i cook lol) i mixed parmesan and mozzarella

i sliced some baby bella mushrooms and crumbled some garlic and herb goat cheese for the top

then i baked my pizza again. maybe 8 mins? i let it stay in the oven while i finished washing the dishes and when it pulled it out it was beautiful and delicious and everything i hoped it would be.

moral of this story ? make your own pizza !

all of the pizza toppings were things i normally keep in my household anyway. and the pizza crust? it was less than 3$ !!!

a cheese pizza alone is estimated 8$ + cost of additional toppings. and it took me less than 15 mins in cooking time !
